Jamie makes a disgustingly good treat. It's got all the elements you need in a great pud plus it's frozen!
300 grams oaty biscuits 8 over ripe bananas 225 grams dulce de leche 500 grams light cream cheese Quality dark chocolate - 50 grams for melting and up to 100 grams for shavings 2-3 tablespoons extra virgin olive oil
Start Jamie's frozen cheesecake recipe by melting 50 grams of quality dark chocolate in a heat proof bowl over simmering water. While the chocolate is melting, whizz up the oaty biscuits in a food processor or bash them up in a bag with a rolling pin. You should aim for a fine texture. Pour in a glug of olive oil and the melted chocolate and whizz up again until everything os combined. While the ingredients are whizzing in the food processor, oil a 20cm spring form tin and line it with grease proof paper. When the ingredients are all combined, pour them into the greased tin and pat and smooth it down. Peel 8 over ripe bananas and put them into the food processor along with 500 grams of cream cheese and 225 grams of dulce de leche. whizz everything up until you have a smooth mixture. Pour the mixture on top of the biscuit base and place in the freezer for at least four hours. Bring out of the freezer and put in the fridge for up to two hours before serving.
